and yeah i wanna know all about ur cookies specially ur Levain CC,which wanna make realll soonnnn and wanna crunchy crispy result and will try ur tips(they will work i know coz did try &#039;em with a cookie last time ,reducing the size ie but doea the brown sugar in &#039;em make &#039;em chewy?)

		<description>I love your posts.  i just found you because I was looking for a cookie recipe for Levain&#039;s.  I am a chef but haven&#039;t enjoyed baking until recently.  I think it has something to do with following directions...  Anyhow.  There is a bakery near me in Oakland, CA that makes THE BEST CHALLAH IN THE WORLD!!  The baker is not the nicest man, a bit of a &quot;Challah Nazi&quot;-- he will NOT share his recipe with anyone, but he makes the freshest, sweetest, softest and chewiest challah.  It is Grand Bakery on Grand Ave.  Any idea how he gets the crust so chewy while the rest is so soft?  He also has the perfect balance between sugar and salt.  Do you think you can try to replicate?  I&#039;d be happy to send you a loaf!</description>
